My 2 daughters and I were hit by an 18 wheeler, although we suffered injuries the insurance is only wiling to pay for medical and a couple thousand dollars extra. This is not representative of the pain and suffering this has caused me and my girls, but that's all they say the claim is worth. How do I go about filing a personal injury suit and where do I file it?

I am sorry to hear about your situation. Insurance company claims adjusters are experienced negotiators, many of whom have handled thousands of claims with similar facts. Their goal is to get the claim resolved for as little money as they can get away with, while you need to get an amount that, given the facts and the law, will compensate you and your children for all of the injuries and damages.
I suggest that you hire an attorney to assist you in presenting your claims. Many times the simple act of hiring an attorney to assist in negotiating a settlement can bring value to your claims. In cases such as yours, my firm would typically charge a contingency fee based on either the amount you eventually recover over the amount you have already been offered in settlement, or on the total amount you receive, with a reduction in fees if you do not recover at least as much as you have already been offered to settle.
